Victorinox Flexible Boning Knives feature high carbon stainless steel blades that are specially ground and tempered so they can be re-sharpened over and over and will not discolor or stain. They have an ergonomic Fibrox handle that is hygienic, dishwasher safe, slip resistant and NSF approved. The flexible design is ideal for poultry and fish.
